Get ready to have your day MADE. As a part of our initiative to #MakeEveryDayStellar, we are working hard to bring you inspiring content that will lift your spirits. I thought of no better way to kick this off than with this amazing recipe, mama, friend, and business owner.

If you’re on Instagram, make SURE you are following Katelyn Block! Her passion is health, wellness, design and kick ass food! I have followed her for years because we are friends and have been for longer than our children have been alive. But she recently started sharing her passions and it’s inspired me. I find myself saving every recipe that she shares and it helps tremendously that her photos are bomb AND that I’ve tasted her cooking before.

And it’s amazing.

She’s amazing.

So I’m sharing today, her Sweet Potato Hash Skillet! This recipe was pulled straight from her Instagram, with her permission of course. But to find more lovely and healthy meals, follow the links and check her out. You wont regret it!

1 sweet potato, chopped
• 1 carrot, diced
• 1/4 cup onion, diced • 1 garlic clove, minced
• 1/4 cup red bell pepper, diced
• 1/2 cup broccoli, chopped
• 1 chicken and apple sausage –@aidellssausage • evoo
• 3 eggs
• green onion, diced
• salt and pepper

Sauté sausage, add veggies and sauté until tender. Make three shallow holes in hash for the eggs. Crack the eggs into pan, cover and cook in skillet for 5-7 minutes. (Or you could bake if in an oven safe skillet.) Top with green onion and salt and pepper. Enjoy! 🙌

About The Author

I’m the owner and editor of Stellar Day Blog! I started blogging back in 2009 right after I had my first son and I often say that blogging saved my life. I didn’t realize I had so much I wanted and needed to say, and blogging gave me a creative outlet to do it. It turned from figuring out how to be a mom into wanting to encourage and inspire others in a lot of avenues that inspire ME daily. I love Jesus, people, coffee, starting businesses and encouraging others to succeed. I’m the owner and CEO of Jay & Jess Photography, which I own with my husband. We live in Scottsdale, AZ and don’t plan to leave anytime soon UNLESS we have the chance to move to the mountains. Just kidding. Not really. Sort of. I love to travel, get coffee with friends, take rad photos and build relationships with our clients. After all is said and done, it’s my goal with this blog to lift your spirits a little, and for you to leave a little happier than when you came. Because everyone knows that we could all use a little more happy in our days. I’m just a girl who’s inspired by life, people, details, words, art, love and who seeks any opportunity possible to spark a little inspiration into others. So I hope you find just that!
