I have followed her for years because we are friends and have been for longer than our children have been alive. But she recently started sharing her passions and it’s inspired me. I find myself saving every recipe that she shares and it helps tremendously that her photos are bomb AND that I’ve tasted her cooking before.
And it’s amazing.
So I’m sharing today, her Sweet Potato Hash Skillet! This recipe was pulled straight from her Instagram, with her permission of course. But to find more lovely and healthy meals, follow the links and check her out. You wont regret it!
1 sweet potato, chopped
• 1 carrot, diced
• 1/4 cup onion, diced • 1 garlic clove, minced
• 1/4 cup red bell pepper, diced
• 1/2 cup broccoli, chopped
• 1 chicken and apple sausage –@aidellssausage • evoo
• 3 eggs
• green onion, diced
• salt and pepper
Sauté sausage, add veggies and sauté until tender. Make three shallow holes in hash for the eggs. Crack the eggs into pan, cover and cook in skillet for 5-7 minutes. (Or you could bake if in an oven safe skillet.) Top with green onion and salt and pepper. Enjoy! 🙌
