Mac 'n Cheese

I have struggled hardcore this past year with my weight, eating, fitness, all of it. I did the 21 Day Fix back in January and lost almost 10 pounds because of it! It’s an awesome program, so you should definitely check it out.

BUT, I still struggled with the eating part.

Our lives are so fast paced. I always have good intentions and try to make good choices, but inevitably somewhere along the way I slip. And I got tired of slipping and feeling bad. I got tired of starting over and hoping tomorrow would be better.

So I joined Weight Watchers. Again.

I’ve done Weight Watchers a couple of times in my life, and both times I was successful. The first time I did it, I lost almost 65 pounds. CAN YOU EVEN BELIEVE THAT? I loved the flexibility that Weight Watchers gave me. I can eat whatever I want, but always choose better choices while on the program because I WANT to. There’s no deprivation of anything. I can have ice cream if I still want, I just have to count the points. It’s easier, it’s flexible, and it fits my lifestyle perfectly.

It always has.

So I wanted to share a recipe here of an old favorite that I am SO GLAD I can still eat!! Mac n Cheese is one of my all time favorite meals. Am I still a kid?? If liking Mac ‘n Cheese makes me one, then YES. This is a low point recipe and pretty much the easiest thing to whip up. Check it out:

* 1 1/2 cups uncooked elbow macaroni
* 1 can low fat cheese soup
* 1/2 can water
* 3/4 cup low fat milk

1. Cook noodles according to the package and drain.
2. Return noodles to the pan and add cheese soup, water and milk. Stir well and bring to a boil.
3. Once it’s at a boil, lower the heat and let simmer for about 5 minutes.
4. Divide up into bowls and ENJOY.

I’m a huge fan!! AND IT’S ONLY FOUR POINTS.

Hashtag WINNING.

I didn’t realize I had so much I wanted and needed to say, and blogging gave me a creative outlet to do it. It turned from figuring out how to be a mom into wanting to encourage and inspire others in a lot of avenues that inspire ME daily. I love Jesus, people, coffee, starting businesses and encouraging others to succeed. I’m the owner and CEO of Jay & Jess Photography, which I own with my husband. We live in Scottsdale, AZ and don’t plan to leave anytime soon UNLESS we have the chance to move to the mountains. Just kidding. Not really. Sort of. I love to travel, get coffee with friends, take rad photos and build relationships with our clients. After all is said and done, it’s my goal with this blog to lift your spirits a little, and for you to leave a little happier than when you came. Because everyone knows that we could all use a little more happy in our days. I’m just a girl who’s inspired by life, people, details, words, art, love and who seeks any opportunity possible to spark a little inspiration into others. So I hope you find just that!
